L’étude de la confiance envers l’alimentation
une analyse du domaine de recherche

Les crises alimentaires, comme le cas de la “vache folle” et la controverse à propos des aliments géné-tiquement modifiés, ont conduit à une “crise de confiance” du consommateur, dont les conséquences économiques dans certains pays ont été importantes. En réponse à ces crises, les gouvernements de ces pays ont tenté de réformer la législation et la structure des systèmes de sécurité alimentaire et ont investi lourdement dans la recherche sur la perception et dans la communication sur les risques alimentaires, cherchant à rétablir la confiance des consommateurs et à éviter de futures controverses. Au Brésil, ces crises, quoique ressenties, ont eu des conséquences différentes sans, toutefois, que le système de sécurité alimentaire ait été mis en question ou que l’opinion publique sur les risques alimentaires ait été consi-dérée. Dans cet article, nous analysons certaines des principales recherches sur la confiance dans les ali-ments, tout en cherchant à systématiser les principales approches utilisées et les résultats trouvés dans ce domaine sur le plan international. Nous présentons également une brève analyse du système de sécurité alimentaire au Brésil, ainsi que le domaine de recherche nationale, ce qui nous permets, en conclusion, de faire des propositions pour la recherche au Brésil.
