O estudo da confiança na alimentação

As crises alimentares, como o caso da “vaca louca” e a controvérsia sobre os alimentos transgênicos levaram a uma “crise de confiança” do consumidor, com consequências econômicas significativas em alguns paí-ses. Em resposta, seus governos buscaram reformular a legislação e a estrutura dos sistemas de segurança alimentar e fizeram fortes investimentos em pesquisa sobre a percepção e em comunicação sobre os riscos alimentares, buscando restaurar a confiança dos consumidores e evitar futuras controvérsias. No Brasil, essas crises, apesar de sentidas, tiveram consequências diferentes, sem que houvesse questionamento do sistema de segurança alimentar ou se considerasse a opinião pública sobre os riscos alimentares. Nesse trabalho, analisamos algumas das principais pesquisas sobre confiança na alimentação, buscando sistema-tizar as abordagens utilizadas e os resultados encontrados nesse campo no cenário internacional. Também apresentamos uma breve análise do sistema de segurança alimentar brasileiro, bem como o campo de pesquisa nacional, o que nos permite, nas considerações finais, formular sugestões de pesquisas no país.
